CULI 101 – Food Service and Preparation I

Basic procedures and techniques for large quantity food preparation and service are covered. The practice of sanitation, safety, equipment operation, food purchasing and preparation techniques, and table service are integral to this course. Special projects in menu planning,
purchasing, preparation, and services are required. Coursework will also include elements of local food sourcing and menu development from that approach.

CULI 102 – Food Preparation II

Building on introductory concepts learned in CULI 101, the course focuses on culinary operations concepts, including kitchen structures and design, inventory and control, service systems and advanced menu development within a commercial setting. Attention is given to food combinations, types of cuisine, and the creative as well as practical process in menu planning and costing of product from local sources when practical.

Qualifications:

Associate’s degree in a closely related area is required, with a minimum of 3 years of industry experience. Bachelor’s degree, teaching experience and working in a multicultural setting with a diverse student/customer population is desirable. Day or evening offerings may be available.

College AOD Prevention Coordinator

Job Description:

The College AOD Prevention Coordinator is responsible for developing and managing the campus community coalition and its work on environmental prevention objectives aimed to reduce the consequences of alcohol and other drug (AOD), including prescription drug, misuse and abuse in the College community. The Coordinator will be responsible for assessment, capacity and relationship building, planning, implementing, and evaluating activities associated with the College’s AOD abuse prevention priorities.  Leads the coalition, in concert with other community coalitions and prevention organizations, in developing and executing strategies that foster long-term engagement in efforts to promote student health and success.  The Coordinator will be responsible for ensuring that the necessary Office of Alcohol and Substance Abuse Services (OASAS)
reporting requirements, including interim reports and a final report, are completed and submitted. Work is subject to general administrative controls.

Minimum Qualifications:

Bachelor’s degree and three years of experience in communication,
education, health promotion, social work or related field required.  Master’s degree in Health Promotion, Public Health, Social Work (addictions focus) or related field is preferred. Experience in AOD abuse prevention, particularly environmental strategies for prevention also preferred.  CPP, CHES, or MCHES highly desirable. This position is subject to a criminal background check.

In addition to the Culinary Center in downtown Ithaca, the Farm to Bistro project includes a working organic farm on property adjacent to the College’s Dryden campus for students in the and Sustainable Farming and Food Systems program. The farm also provides produce for use at Coltivare.

Job Description:

The Banquet Server at Coltivare works as part of a team providing ideal service for our guests for catered events and banquets.  Responsible for providing legendary service to each and every guest during events and the clean-up and breakdown of service after the events.  Banquet servers work under the direction of a manager or banquet supervisor.  Acts as an ambassador of Coltivare and TC3 and knowledgeable of the culinary arts and sustainable farming degree programs and continuing education programs; acts proactively to cross-market these programs to all guests. Responsible for upholding all of Coltivare’s service standards and assisting the Management Team in meeting the educational mission of the TC3 Culinary Center at Coltivare and the College.

Minimum Qualifications:

High school diploma or general education degree (GED).  Must have the ability to communicate effectively with others, both orally and in writing; and the ability to exercise mature judgment.

Expected Hiring Salary Range:

$10.00 - $15.00 per hour

The TC3 Farm Opportunities

The TC3 Farm is located adjacent to the College’s Dryden campus and supplies fresh produce to the College’s downtown Ithaca restaurant and culinary center, Coltivare, as well as running a CSA for community members and a weekly farm stand on campus. The farm directly supports students in the College’s innovative Sustainable Farming and Food Systems program, but classes and volunteer opportunities are open to all members of the College community.
